Caprese Sandwich - What to do with tomatoes from your fall garden

It is fall, which means you have a lot of tomatoes hanging around if you have a garden. Rather than using them all to make salsa (which is awesome), try this. It is my new favorite sandwich.

No, really, it is absolutely delicious.


Ingredients (three of them)

  • Tomato, sliced
  • Mozzarella cheese (we went for Frigo string cheese which we pulled apart, worked just fine)
  • Fresh basil (you will not need a lot, fresh basil is strong)

From the pantry

  • Bread (toast it a little, we used Orowheat's 150 calorie Sandwich Thin)
  • Olive oil (sprinkle lightly on toasted bread)
  • Balsamic Vinegar (see olive oil)
