Raspberry-Pineapple Carnita Street Tacos

Skip the cheese, sour cream, and salsa. You will lose all the flavor. Your salsa will be the raspberry infused pineapple chunks you make with this.

Serves four. Prep time: 15 minutes

Ingredients (Five of them)
  • 1 Raspberry Chipotle Pork Tenderloin (available at Sam's Club in sets of two...you only need one) - (If this is not available to you, then just buy 1 pound Pork Tenderloin)
  • 3/4 cup Fischer & Wieser Roasted Raspberry Chipotle Sauce (available at jelly.com...locations at http://www.jelly.com/stores.php) - (If this is not available to you, repent and buy it online. It is worth it).
  • 1 small can pineapple chunks, drained
  • 2 cloves garlic, sliced thinly
  • 2 tablespoons olive oil
Instructions
  1. Use your slow cooker/crockpot. Cover the bottom of your slow cooker with a piece of aluminium foil. Spray the foil.
  2. Place the pork tenderloin (whole) on the foil.
  3. Drizzle the tenderloin with the oil.
  4. Pour the sauce, garlic cloves, and pineapple over the meat.
  5. Turn cooker onto low and cook for four hours.
  6. When done, use two forks to pull apart the pork.

Serve with warmed small tortillas, guacamole, and diced onions. For increased texture, use shredded cabbage, thinly sliced radishes, and corn tortillas. But no no no sour cream or cheese!
